Bakai defines our cuisine as a gastronomical fusion of California, Latin-American, and European. Food Director Pablo Antinao was born and raised in Chile, lived in Spain, and have lived in California for fourteen years. He combines his personal experience, his life journey from the place he was born, his memories as a child of comfort food and cooking at home, with the experience of traveling and living in different countries as an adult. Pablo experiences different forms of food and ingredients and also takes some classic and traditional recipes like; palta reina, (queen avocado) from Chile, causa from Peru, and tacos from Mexico and uses his imagination to twist these recipes, adding his own interpretation while always respecting and honoring the history and tradition of foods.
